Today was the Bellevue College Associated Student Government’s BBQ and Student Government elections<\/a> and if you were not here, the courtyard on campus was filled with voters, groups, local companies and lots of fabulous food trucks!<\/p>\n

One of those trucks, Plum Burgers<\/a>, is a vegan food truck and was brought to campus by the Office of Sustainability as part of our Food, Waste and Ecology<\/a> efforts to offer more options on campus.<\/p>\n

The menu was amazing with Jerk + Yam Burgers, Plum Whopper Burger, Chipotle Grill Sandwich, Raw Kale and Fresh Tofu Salad, Chorizo Tacos, Plum Nachos and Curry Yam Fries. \u00a0They also offered Cookies and Cream and Strawberries and Cream Milkshakes. \u00a0As you can see by the images below, the vegan option was “Plum Good” for many students, staff and the environment with their Greenware and packaging options! \u00a0Just another way the Office of Sustainability is helping offer a wider variety of options, even with our event food trucks!<\/p>\n
